Zucchini Bread/Banana Bread- Susan Peterson

3 eggs
1 scant cup oil
2 ½ cup sugar
2 teaspoons vanilla
2 cups zucchini

3 cups flour
1 teaspoon salt
1 tsp soda
1 teaspoon cinnamon
¼ teaspoon baking powder
1 cup nuts


Bake at 325 for 1 hour.  Makes 2 loafs
For Banana bread – add 3 – 4 bananas
