Oatmeal Roll


2 cups water
1 cup quick oats or rolled 7 grain cereal
3 TB butter or margarine
In a saucepan bring water to boil, add oats and butter. Stir cool to lukewarm

1 1/3 cup warm water or milk (110-115°)
1 TB Saf yeast
1/3 cup brown sugar
2 TB sugar
1 ½ teaspoon salt
4 3/4 cups flour

In mixing bowl add water, yeast, sugars, salt, oat mixture and 4 cups of flour: beat until smooth.  Add enough remaining flour to form a soft dough.  Turn onto a floured surface: knead until smooth and elastic 6-8 min.. (I mix it in mixer) Place in a greased bowl, turning once to grease top.  Cover and let rise in a warm place until doubled, about 1 hour.  Punch dough down. Let rest10 min and shape into 18 balls. Place on greased baking pan cover and let rise until doubled. about 45 minutes.  Bake at 350 ° for 20-25 min. I cheat and do hot faster, Until golden brown.
